With unlimited pto you’re thinking “am I being tested to see how much time off I’ll really take?” Companies should make a set amount of time, like 2 weeks mandatory, paid, when they offer unlimited PTO.

The issue is here is no logger tracking for any time off. So it would be up to you manager or you to take it to make sure you get the amount of vacation you were offered when hired. and if you do not take time if just never existed, and would not be paid out if you leave with out taking time.
